Products from the South

The coasts and the land of Andalusia provide us with a wide range of fish, seafood, meat and vegetables that from one end to the other offer a wide range of possibilities for our palate. Our menu is constantly changing so that you can also try seasonal dishes, although the classics always stay with us.

ADOBO

Always selecting the best pieces of the best fish for this preparation, our condiment has become a classic in our cuisine. Well-selected spices, the best sherry vinegar and our characteristic frying process turn these fish into an addictive delicacy.

ORTIGUILLAS

There are many of you who doubt whether the ortiguilla is seaweed or animal, and the fact is that the anemona sulcata leaves no one indifferent, as strange as it is delicious. That is why those who try them repeat, because they know how to conquer the most exquisite palates.

SALAZONES

Salt from the sea and fish from the sea. Salting, a historic technique that turns the product into a delicacy. At La Chana you can enjoy the best salted fish in Barbate to whet your appetite. Don’t miss the opportunity to accompany them with a good manzanilla de Sanlúcar.

CHiCHARRONES

Because fish is not the only thing to live on. The chicharrón al corte, perhaps not the best known style, but one of the best ways to enjoy this sin made meat. Don’t forget the lemon and salt.

LAGARTITO IBÉRICO

No, we are not exotic enough to eat lizards. The lagartito is a tasty cut of pork, in our case acorn-fed Iberian pork, which, sautéed with Oloroso de Jerez, elevates this piece to the olympus of simple meat dishes.

MOLLETE DE PRINGÁ

Antequera mollete and homemade pringá. Nothing can go wrong with this combination of village flavours and your mother’s cooking. Well-selected meats and sausages to take something so simple to the highest level.

Blessed by a unique climate and our albarizas lands, Cadiz becomes the perfect setting not only for the production of our representative sherry wines, but also for an infinite number of white and red wines perfect for pairing with our Cadiz menu.

Fino de jerez

Fino

A dry and light wine, made from Palomino grapes and aged under a veil of flor in the Jerez area. It is fresh, with notes of almonds and a saline touch.

manzanilla de sanlucar

Manzanilla

Produced specifically in Sanlúcar de Barrameda, which gives it a saltier and fresher character due to the influence of the climate and the sea.

vino amontillao de la chana

Amontillado

A wine that begins its ageing as a fino under a veil of flor, but later oxidises as it loses this layer, acquiring an amber colour and a more intense flavour, with notes of dried fruits and wood.

Vino oloroso de la chana

Oloroso

Dry wine that is made without a veil of flor, which allows it to oxidise and develop a dark colour and a deeper flavour, with nutty, caramel and spicy aromas.
